The concept of “liberalized diets” is now mainstream in long-term care. This course outlines the recommendations of the Dining Practice Standards from the Pioneer Network. The Standards help Certified Dietary Managers identify dining requirements, importance of food selection, and understand the requirements of Centers for Medicare & Medicaid Services (CMS).

Learning Objectives

Upon completion of this course, the successful learner will be able to:

  • Identify the dining requirements as an integral part of individualized care
  • Discuss the importance of food selection and dining experience as a significant element of daily living
  • Understand the requirements of CMS and regulatory bodies in order to improve the quality of life for persons in healthcare facilities
